Commis Chef Nwabisa Dyibishe has been part of the Boardwalk Hotel and Casino’s kitchen for nine years, rising from intern to Commis Chef in the hot kitchen, where she specialises in grilling and comfort food.
Her Giant Double Cheese Gourmet Burger for International Burger Day features crispy smash patties, cheddar, bacon, egg, and a signature burger sauce served with fries, inspired by her early cooking memories with her late mother and her passion for bold, flavourful dishes.

For the Giant Double Cheese Gourmet Burger
Ingredients
- 500 g ground beef
- Salt and black pepper, to taste
- 4 sesame seed burger buns
- 4 slices cheddar cheese
- 4 rashers streaky bacon
- 4 eggs
- Lettuce leaves
- Sliced tomato
- Sliced onion
Burger Sauce
- ½ cup mayonnaise
- 2 tbsp BBQ sauce
- 1 tbsp mustard
- 1 tbsp sweet chilli sauce
- ½ tsp smoked paprika
For the Fries
- 4 portions thick-cut fries
- Oil for frying
- Salt to season
Method
1. Prepare the Fries
Deep fry the fries in hot oil until golden brown and crispy. Remove from the oil, drain, and season lightly with salt.
2. Make the Burger Sauce
Combine mayonnaise, BBQ sauce, mustard, sweet chilli sauce, and smoked paprika in a bowl. Mix until smooth and set aside.
3. Cook the Bacon & Eggs
Fry the bacon until crispy and golden.
In the same pan, fry the eggs sunny side up until the whites are set but the yolk remains soft.
4. Prepare the Smash Patties
Divide the beef into 4 equal balls. Heat a flat pan or griddle until very hot.
Place the beef balls onto the pan and press down firmly with a spatula to form thin patties. Season with salt and pepper.
Cook for 2–3 minutes until crispy around the edges, then flip. Add cheddar cheese and allow it to melt over the patties.
5. Toast the Buns
Lightly toast the burger buns until golden.
6. Assemble the Burger
Spread burger sauce onto the buns. Layer with lettuce, tomato, onion, cheesy smash patty, crispy bacon, and top with a fried egg.
Serve immediately with hot crispy fries.
