Grilled lemon chicken
Serves 4
Ingredients
- 600 g chicken portions
Marinade
- 5 cloves garlic (crushed)
- Juice of one small lemon
- 1 tbsp margarine (low cholesterol)
- 2 tbsp olive oil
- 1 tbsp freshly chopped/dried rosemary
- 1 tbsp dried origanum
- 1 tbsp dried basil
- Salt and pepper to taste
- A pinch of dried chilli (optional)
Preparation
Step 1: Preheat oven to 190 °C.
Step 2: Combine marinade ingredients and heat in microwave until margarine has melted.
Step 3: Rub over chicken portions and place in refrigerator for 10 to 15 minutes.
Step 4: Place chicken portions on a grilling rack and grill in the oven until done (40 minutes). Chicken should be crispy and cooked through.
Step 5: Serve with a crusty bread and a side salad.
NOTE: This recipe calls for the chicken to be prepared in the oven, but it can also be done on the braai.
