Having worked in professional kitchens for over 20 years, including 14 years at the Boardwalk Hotel, Sapokazi says her true passion lies in the cold kitchen, where she enjoys preparing creative salads and starters.
This creamy hummus recipe combines simple ingredients for the perfect snack or light starter.
Hummus Recipe
Ingredients
- 500g chickpeas
- 60ml olive oil
- 60ml lemon juice
- 1 tbsp garlic
- 1 tbsp veggie spice
Method
Step 1
Boil the chickpeas over medium heat for approximately 3 hours, or until soft and tender. Remove from the heat and allow to cool slightly.
Step 2
Add the chickpeas, olive oil, lemon juice, garlic, and veggie spice to a blender. Blend on high speed until smooth and well combined.
Serve and garnish with julienned carrot and edible flowers for a fresh, colourful finish.
Tips from chef:
- For extra smooth hummus, peel the chickpeas after boiling.
- Add a little cold water while blending for a creamier texture.
- Taste as you blend and adjust the lemon juice or seasoning to your preference.
- Drizzle olive oil over the hummus before serving for added richness and shine.
