The Express group of newspapers has its very own, limited edition recipe book, Express Chef Recipe Collection, with a compilation of almost 200 family favourite recipes from our readers across the Eastern Cape province.

Win an Express Chef Recipe book and apron, by simply sharing our Recipe of the Day on your Facebook page. Two names of people who have shared the recipe post will be picked from a lucky draw. Draws will take place fortnightly.

Vossie de Vos’ chocolate cheesecake

Ingredients

  • 200 g Romany Creams, crushed
  • 90 g melted butter

Topping

  • 425 g tin black cherries, drained
  • Cocoa for garnish

Filling

  • 385 g tin condensed milk
  • 250 g dark chocolate, chopped
  • 250 g cream cheese
  • 500 ml cream, whipped

Preparation

Crust

Step 1: Grease and line a 25 cm spring-form cake tin withbaking paper.

Step 2: Mix biscuit crumbs and melted butter, spoon into prepared cake tin and press down firmly.

Step 3 : Place in fridge.

Filling 

Step 1: Pour condensed milk in a pot and heat over low until boiling, stirring continuously.

Step 2: Stir another five minutes, remove from heat, add chocolate and stir until melted.

Step 3: Add cream cheese, beat well and let mixture cool completely.

Step 4: When the mixture has cooled, fold in the whipped cream. Spoon mixture onto the chilled biscuit crust and place in fridge for an hour.

Topping

Step 1:  Halve the cherries and arrange on top of the set cheesecake.Keep in fridge until served with whipped cream.
