Maswazandile Mebusela’s shortcut to the perfect quiche
Ingredients
- 2 kg cubes of beef, pork, chickenor mutton meat
- 3 onions, sliced
- Oil to fry the onions
- 4 garlic cloves, crushed
- 1 small piece of ginger, grated
- 125 g sugar
- 200 ml vinegar
- 250 ml water
- 3 tbsp of apricot jam
- 50 ml curry powder
- 2 tsp salt
- 5 ml pepper
- 1 tsp cinnamon
- 1 tsp jeera and dhanja powder
- 2 cubes chilli beef stock
- 1 tin tomato relish
Preparation
Step 1: Fry the onions in the oil and add the garlic and ginger.
Step 2: Add the meat and fry until brown.
Step 3: Mix the sugar, vinegar, water, curry powder, salt, pepper, apricot jam, cinnamon, jeera and dhanja powder, chilli beef stock and tomato relish.
Step 4: Add the mixture to the meat and cook slowly for 1 hour.
Step 5: Cut three medium-sized potatoes and two carrots into cubes and add to meat mixture.
Step 6: Cook everything together for a further 30 minutes.
Step 7: Serve the curry with rice, pumpkin, green beans and tomato and onion salad.
