Lorna de Beer’s blackberry fudge cake
Ingredients
- 50 g butter
- 200 g castor sugar
- 3 eggs
- 125 g cake flour
- ¼ tsp salt
- 1 tbsp baking powder
- 50 ml milk
- 1 tin blackberries, drained
Top Layer
- 175 ml milk
- 150 g sugar
- 75 g butter
Preparation
Step 1: Beat the butter until creamy.
Step 2: Add a little castor sugar and beat.
Step 3: Add 1 egg and beat well.
Step 4: Add the rest of the castor sugar and the other 2 eggs and beat well.
Step 5: Add flour and baking powder and alternate with the milk.
Step 6: Pour mixture into a greased square dish.
Step 7: Put drained berries on top of mixture.
Step 8: Bake at 180 °C for 40 minutes (check after 30 minutes).
Step 9: While cake is baking, prepare top layer.
Step 10: Put all three ingredients into a small saucepan.
Step 11: Boil at medium heat for 15 minutes.
Step 12: Sauce will show signs of burning on the side.
Step 13: Take off the stove and beat well.
Step 14: Pour sauce over cake while cake is still hot.
Step 15: Serve hot or cold as a cake or pudding.
