Jeanette Bekker’s eggless chocolate cake

Ingredients

  • 375 ml cake flour
  • 10 ml baking powder
  • 250 ml sugar
  • 2 ½ ml baking soda
  • 40 ml cocoa
  • 2 ½ ml salt
  • 250 ml boiling water
  • 125 ml oil
  • 5 ml vanilla essence
  • 25 ml white vinegar

Icing Sugar

  • 500 ml icing sugar
  • 8 tbsp soft margarine
  • 4 tbsp cocoa
  • 2 tsp baking powder
  • ± 3 or 4 tbsp of boiling water

Preparation

Step 1: Sift the cake flour, baking powder, sugar, baking soda, cocoa and salt together.

Step 2: Mix the boiling water, oil, vanilla essence and white vinegar well. Add the mixture to the dry ingredients and beat thoroughly.

Step 3: Bake in a 22 x 22 cm baking dish at 180 °C for 20 minutes.

Step 4: Beat all the ingredients for the icing to form a soft mixture.

Step 5: Decorate the cake to your own taste.
