Inge Stickling’s tasty carrot muffins
Ingredients
- 2 cups cake flour
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- ½ cup sugar
- 1 egg
- 1 cup milk
- ¼ cup oil
- 1 cup grated carrot and nuts (mixed)
Preparation
STEP 1: Preheat oven to 170 °C.
STEP 2: Mix all the dry and wet ingredients together.
STEP 3: Add the grated carrot and nuts last and mix through.
STEP 4: Transfer the mixture into muffin pans.
STEP 5: Bake at 170 °C for 15 to 20 minutes.
STEP 6: Decorate the muffins with cream cheese and chopped nuts.
