Elizabeth’s sugar-free milk tart
Ingredients
- 2 cups fat-free milk
- 1 heaped tbsp cornflour
- 1 tbsp cake flour
- 1 tsp vanilla essence
- ½ tbsp medium or low-fat spread
- 1 egg (beaten)
- Sweetener to taste
- Cinnamon
- Plain digestive biscuits or Provita for the crust
Preparation
Step 1: Line the base of the tart dish with the digestive biscuits.
Step 2: Mix cornflour, cake flour and egg with a little of the milk to form a smooth paste.
Step 3: Bring the remainder of the milk and the medium or low-fat spread to the boil.
Step 4: Add to the smooth paste and bring to boil while stirring until mixture thickens.
Step 5: Add the sweetener and vanilla essence and stir very well.
Step 6: Pour the hot picture over the biscuits. Sprinkle with cinnamon.
Step 7: Serve hot or cold.
