Aldo Gouws’ mom’s curry chicken

Ingredients

  • 1 large chicken
  • Bay leaves (to taste)
  • 5 ml soya sauce
  • 4 potatoes, cubed
  • Baby carrots, peas and corn (to taste)
  • ½ pkt cream of mushroom soup

Sauce

  • 15 ml curry powder
  • 10 ml Worcestershire sauce
  • 15 ml tomato sauce
  • 15 ml fruit chutney
  • 50 ml mayonnaise
  • 50 ml apricot jam

Preparation

Step 1: Boil chicken with bay leaves, chicken stock, 1 onion and soya sauce until cooked. Leave to cool. Remove from pot and cut into pieces.

Step 2: Cook potatoes, baby carrots, peas and corn in same water. Remove from water.

Step 3: Fry 1 large onion.

Step 4: Mix the sauce ingredients and add to onion.

Step 5: Add chicken pieces, vegetables and ½ packet cream of mushroom soup.

Step 6: Cook together for few minutes.

Step 7: Serve on rice.
