Maswazi Mabusela’s carrot cake
Ingredients
- 2 cups flour
- 1 cup white sugar
- 1 cup brown sugar
- 5ml baking powder
- 5ml baking soda
- Pinch of salt
- 5ml cinnamon
- 5ml mixed spice
- 2 cups grated carrots
- 1 cup nuts of your choice
- One handful grated pineapple
- 125ml oil
- 3 eggs
Preparation
Step 1: Sift the dry ingredients.
Step 2: Whisk eggs, oil and sugar together.
Step 3: Mix everything together.
Step 4: Bake for 30 minutes at 180 °C.
Step 5: Decorate with cream cheese icing.
