The Express group of newspapers has its very own, limited edition recipe book, Express Chef Recipe Collection, with a compilation of almost 200 family favourite recipes from our readers across the Eastern Cape province.

Win an Express Chef Recipe book and apron, by simply sharing our Recipe of the Day on your Facebook page. Four names of people who have shared the recipe post will be picked from a lucky draw. Draws will take place fortnightly.

Lizelle’s quick and easy bobotie

Ingredients

  • 1 kg lean beef mince
  • 2 onions
  • 1 slice of bread
  • 1 cup of milk
  • 2 eggs
  • 1 tbsp curry powder
  • 1 ½ tsp sugar
  • 2 tsp salt 
  • ½ tsp pepper
  • ½ tsp turmeric
  • 2 tbsp vinegar or lemon juice
  • 4 bay leaves
  • 3 tsp chutney
  • Cooked yellow rice with raisins(raisins are optional)

Preparation

Step 1: Mix everything except rice and cook on stove-top until done.

Step 2: Bake in an ovenproof dish for 10 minutes in preheated oven at 180 °C.

Step 3: Serve on a bed of yellow rice mixed with raisins.
