Michelé’s chocolate fridge tart

Ingredients

• 500 ml boiling water

• 375 ml sugar

• 30 ml margarine

• 125 ml cornflour

• 70 ml cocoa

• ¼ tsp salt

• 200 ml cold water

• 4 tsp vanilla essence

• 1 packet Tennis biscuits

• Cream for decoration

Preparation

1. Dissolve sugar and margarine in hot water.

2. Make a paste of cold water, cornflour, cocoa and salt.

3. Stir paste into hot mixture and boil until thickened, stirring continuously.

4. Stir in vanilla essence.

5. Pour onto biscuits.

6. Chill and decorate with whipped cream.

Tip: You can also sprinkle a little grated chocolate over the tart.
