• Extra virgin is the purest, freshest form of olive oil. It contains the natural flavours and nutrients of what is essentially a fruit juice, proven by a laboratory analysis and expert taste test. All Willow Creek’s products are strictly extra virgin.
• Virgin olive oil is natural too, but of slightly lower quality. Even more inferior, is any oil not labelled as extra virgin or virgin. It failed the quality tests and had to be refined into being consumable.
• The green SA Olive Commitment to Compliance seal verifies the harvest year of a bottle of olive oil, that it is 100% South African and that it has undergone verification tests by the SA Olive Tasting Panel.
• Olive oil is at its best when it is fresh. If not over-exposed to light or oxygen, it has a shelf life of about two years. So always buy oil from the most recent harvest (before August, from the previous year; after August, from the current year).
• Olive oil is either delicate, medium or intense and will complement different types of food. Willow Creek offers the delicate Nuy Valley, the medium Estate Blend and the intense Directors’ Reserve.
