There is nothing better than a seafood potjie, come rain or sunshine. Try this recipe by Food Lover’s Market which is simple and all about sharing, enjoying good food, and making memories without any fuss.

Ingredients:

5 ml olive Oil

1 medium onion, finely chopped

125 ml white wine

500 ml fresh cream

10 ml crushed garlic

700 g seafood mix, thawed

400 g prawn meat, thawed

1 handful Italian parsley, finely chopped

1 handful dill, finely chopped

juice of 2 lemons

salt and pepper, to season

Method:

1. Bring a potjie or sauce pot to a medium heat.

2. Add the oil and onion and allow to sauté for 2-3 minutes, then add the wine and allow to reduce by half.

3. Add the fresh cream and garlic, allow to cook for 10-15 minutes. The cream must thicken enough to coat the back of a spoon.

4. Before adding the seafood, make sure that any excess liquid has been drained from the meat.

5. Add the seafood into the pot and allow to cook for 7-9 minutes.

6. Add the chopped herbs, lemon juice and season with salt and pepper.

Serve with some toasted garlic bread, rice or salad of your choice.
