Gnocchi isn’t used enough and we are here to change that. It’s such a quick pasta to make and can be tossed in your favourite sauce or can be made into a bake. This creamy three-cheese gnocchi recipe is super-easy and can be made in under 30 minutes.
Ingredients
1 onion, finely diced
2 garlic cloves, minced
250 ml (1 cup) fresh cream
80 ml (1/3 cup) white cheddar, grated
80 ml (1/3 cup) mozzarella, grated
45 ml (3 tbsp) parmesan, grated (plus a little extra for the top)
salt and pepper, to taste
10 ml (2 tsp) parsley, finely chopped
500 g gnocchi, cooked
fresh basil
sprinkle of parmesan
Directions
In a medium sized pan over medium heat, sauté the onion in a drizzle of olive oil until soft and translucent.
Add the garlic and sauté for another minute or two.
Add the cream and allow to simmer on low heat for 8-10 minutes until thickened.
Add the grated cheeses and stir until melted, season with salt and pepper and a sprinkle of parsley.
To serve:
Add the cooked gnocchi to the sauce and stir until well coated. Serve hot with a sprinkle of parmesan, fresh basil and enjoy.
