At a loss for what to end your braai off? Try this delicious and easy braai dessert of Madeira cake with strawberries and cream, perfect for a hot grill.
Ingredients
3 cups sliced fresh strawberries or other berries
5 tbsp sugar
1 tbsp mint
1 cup heavy whipping cream
1 tbsp lemon juice
1 tbsp grated lemon peel
3 tbsp butter, softened
6 slices of Madeira cake, to about 3 cm thick
Directions
In a large bowl combine the berries, 2 tbsp of sugar and mint, and set aside.
In a small bowl beat the cream until it begins to thicken. Beat in remaining sugar. Add lemon juice and peel, and beat until soft peaks form. Cover and refrigerate until serving. Spread butter over both sides of cake slices. Grill, uncovered, over indirect medium heat for 1-2 minutes on each side or until light golden brown. Serve with berry mixture and whipped cream.
