For this recipe, the steaks are cut into slices, spiced and cooked very quickly in the air-fryer. The meat turns out tender and delicious; just don’t be tempted to over-cook it.

Air-fryer temperature: 200 ºC
Ingredients
- 4 large potatoes (use a floury variety that are good for baking such as Avalanche or Sifra)
- 600 g ostrich or beef fillet
- Canola oil
- Texan sizzling steak spice
- Snipped chives, to serve
- Salad, to serve
Amasi sauce
- 100 ml amasi (or use buttermilk)
- 100 ml mayonnaise
- 1 clove garlic, crushed
- 2 spring onions, finely sliced
- 5 ml chutney
1 Wash the potatoes, then prick them a few times with a fork. Bake on high in the microwave oven for 8-10 minutes until tender. Turn over halfway through the cooking time.
2 While the potatoes are baking, slice the meat into thin 5-mm slices. Drizzle with oil and sprinkle with the sizzling steak spice.
3 Amasi sauce Mix the amasi, mayonnaise, garlic, spring onions and chutney together and set aside.
4 Preheat the air fryer to 200 ºC. Drizzle the potatoes with the oil and sprinkle with salt. Bake in the air-fryer for 12-15 minutes, turning them over halfway through the cooking time.
5 Remove the potatoes and put the steak slices into the air-fryer basket in a single layer. Cook for 2-3 minutes, turning the slices over halfway through the cooking time.
6 Using a knife, make a criss-cross pattern in the top of each potato. Squeeze the potato to expose the flesh. Serve each potato drizzled with the sauce, with the steak slices on the side. Sprinkle with chives, and serve a salad on the side.
