This refreshing salad is the perfect accompaniment to any summer meal, or even a light lunch outdoors. The complimenting flavours are superb.
Ingredients
80 g baby pinach, rocket and basil
200 g watermelon, cubed
200 g feta cheese
40 g fresh rocket
Baby spinach
Fresh watercress (*optional)
Dill and chilli dressing
80 ml olive oil
zest and juice of 1 lemon
10 ml dill, roughly torn
5 ml chilli flakes
salt and pepper, to taste
Method
1. Arrange the mixed leaves on a serving platter and top with watermelon cubes, feta and dill.
2. For the dressing put ingredients in a glass jar, shake until emulsified and season to taste.
3. Dress the salad with the salad dressing just before serving.
