As we enter the warmer days, a fresh summer salad is always a nice addition to a meal. Try this green summer pasta salad.

Ingredients

250 g penne pasta

100 g coriander pesto

125 ml fresh peas

1 small red onion

1 avocado

50 g rocket

1 lemon, zest and juice

chilli flakes, optional, to garnish

salt and black pepper

Method

1. Pasta should be al dente, rinsed, drained, and drizzled with olive oil.

2. Once cooled, combine the coriander pesto with the pasta and top with diced red onion, avocado, peas and wild rocket.

3. Sprinkle with chilli flakes, lemon zest and lemon juice.
