Nothing beats an amazing steak, mushroom and miso ramen. Try out this 30-minute recipe:
Ingredients
1 bunch bok choy (leaves separated)
spring onions (to serve)
150 g mushrooms (sliced)
pickled ginger (to serve)
1/3 cup red miso paste
sesame seeds (to serve)
2 tbs mirin
2 tbs olive oil
4 soft-boiled eggs (halved)
400 g rump steak (fat trimmed)
roasted nori sheets (to serve)
270 g dried ramen noodles
Method
Step 1:
– Boil 1,5 litres of water in a large saucepan over medium heat. Cook noodles in boiling water for 4 minutes or until al dente.
– Using tongs, remove the noodles from the water and place them in a bowl. Set aside, covered, to keep warm.
– In the same pan, cook bok choy for 1 minute. Remove with tongs and add to noodles.
– Remove saucepan from heat, add ¼ cup miso and whisk to combine.
Step 2:
– Place mirin and remaining miso in a shallow bowl.
– Season with pepper and whisk to combine.
– Add steak, turning to coat.
– Heat 1 tbsp oil in a large frying pan over medium-high heat.
– Cook steak for 2 minutes on each side for medium or until cooked to your liking.
– Place on a plate, loosely cover with foil and rest for 5 minutes.
– Thinly slice.
Step 3:
– Add remaining oil to the same pan and cook mushrooms, tossing regularly, for 3 minutes or until tender.
Step 4:
– Divide noodles, bok choy and miso broth among four bowls.
– Top with steak, mushrooms, soft-boiled egg, spring onion, sesame seeds and pickled ginger.
– Serve with nori sheets.
