Classic crunchies

Serves: 16 crunchies

A true classic, these simple and delicious oat biscuits can be enjoyed crunchy or with a bit of chew. For an extra-special touch, coat with a layer of chocolate!

Ingredients:

  • 1 tsp bicarbonate of soda
  • 175 g butter
  • 2 cups oats
  • 1 tbsp golden syrup
  • 1 cup desiccated coconut
  • 85 g sugar
  • 1 pinch salt
  • 250 ml cake wheat flour

Method:

In a saucepan over medium heat, melt the butter and syrup together, and when bubbling, add the bicarbonate of soda. In a separate bowl, mix the Snowflake Cake Wheat Flour, oats, coconut, sugar and salt. Mix the wet and the dry ingredients together to form a crumbly mixture. Butter or grease a baking tray (choose the size depending on how thick you want them – note that they will not rise very much). Pack the mixture tightly into the tray by pressing down hard. Bake at 180 ºC for 15 minutes, then a further 10 minutes at 160 ºC. Remove from the oven and slice while hot, and remove from the tin only when cool.

Tomato, mushroom and cheese muffins

Preparation time: 10 minutes

Cook time: 20-25 minutes

Serves up: 12 standard muffins

Perfect for a light and healthy lunch.

Ingredients:

  • 500 ml (280 g) cake flour
  • 15 ml baking powder
  • 2 pinches salt
  • 1 ml cayenne pepper or peri-peri powder
  • 2 celery sticks, coarsely chopped (optional)
  • 125 g button mushrooms, coarsely chopped
  • 125 g cherry tomatoes, halved
  • 250 ml (100 g) grated cheddar cheese
  • 30 ml chopped fresh origanum or thyme or 10 ml dried
  • 300 ml milk
  • 60 ml cooking oil
  • 2 extra-large eggs

Method:

Sift flour, baking powder, salt and cayenne pepper together. Add celery, mushrooms, tomatoes, cheese and origanum. Whisk eggs, milk and oil together. Add to dry ingredients and mix lightly until just combined. Do not over-mix; mixture should still be lumpy. Spoon mixture into greased muffin pans, filling each two-thirds full. Bake in a preheated oven at 180 °C for 20–25 minutes, until done and golden brown. Turn out onto a wire rack to cool. Serve warm with butter.

Banana and chocolate marble loaf

Preparation time: 20 minutes

Cook time: 50 minutes

Serves up: 1 loaf

Ingredients:

  • 125 ml cooking oil
  • 250 ml (200 g) sugar
  • 5 ml vanilla essence
  • 500 ml (280 g) cake flour
  • 10 ml baking powder
  • 1 ml salt
  • 80 ml milk
  • 3 large bananas, mashed (about 250 ml)
  • 20 ml cocoa powder
  • 15 ml hot water
  • 2 extra-large eggs

Method:

Beat oil and sugar together. Add eggs, one at a time, beating well after each addition until light and creamy. Add vanilla essence. Sift flour, baking powder and salt together. Add, alternately with milk, to egg mixture. Add bananas and mix. Mix cocoa powder with hot water until smooth and pour into banana mixture. To obtain a marbled effect, the cocoa mixture should not be stirred through completely. Lightly stir once or twice through mixture and spoon into a lined and greased 22,5 cm loaf pan. Bake in a preheated oven at 180° for about 50 minutes or until baked through. Leave in pan for a few minutes before turning out onto a wire rack to cool completely.
