Eggs have so many great attributes; they’re affordable, versatile and good for you too!
Not to mention how delicious they are, adding a burst of satisfying deliciousness to snacks, lunches, dinners, starters, main courses and even lunch boxes.
So if you’re looking for affordable protein-based meals that won’t break the bank, think eggs… and think beyond breakfast! Right now we’re serving eggs in the most fabulous way with a Creamy Ham, Cheese and Egg Pasta. Not only is this recipe delicious, but it’s also super easy and quick to prepare!
Ingredients:
- ½ x 500 g packet spaghetti (for a healthier option: wholewheat spaghetti)
- Olive oil, for frying
- 1 onion, finely chopped
- 3 garlic cloves, crushed
- Salt and pepper
- 125 ml (½ cup) chicken stock
- 2 eggs, beaten
- 150 g block cheddar cheese, finely grated
- 200 g ham, cubed
- Parsley, for garnish (optional)
Method:
1. Cook spaghetti according to packet instructions.
2. Meanwhile, heat a splash of oil in a large frying pan on medium high and fry the onion for about five minutes or until golden. Add garlic and fry for one minute. Season with salt and pepper. Add the stock and bring to a boil.
3. Drain the spaghetti and immediately add to the pan with the onions. Stir through the eggs, 375 ml (1½ cups) of the cheese and ham until just heated through. Don’t overcook.
4. Serve sprinkled with the remaining cheese and parsley, if using.
Optional: Poach four egg yolks in simmering water for 30 seconds. Season with salt and pepper. Serve on each plate of pasta for added richness.
