Perfect for a summer brunch, these flaky, buttery croissants served with smoked salmon is the perfect summer recipe.
Ingredients
2 large eggs
2 freshly baked Food Lover’s croissants
a handful fresh lettuce of your choice
½ cucumber
120 g smoked salmon ribbons
salt and pepper
a handful micro greens (optional)
Method
1. Boil the eggs according to your liking.
2. Peel off the shell once slightly cooled.
3. Cut the croissants in half and place some lettuce on the base of each one.
4. Using a vegetable peeler, drag it along the cucumber to create ribbons.
5. Add the cucumber ribbons on top of the lettuce, followed by the smoked salmon ribbons.
6. Cut the egg into slices and place on top of the salmon.
7. Season with salt and pepper, and finish off with some micro greens.
