WOMEN’S Health launched the first cookbook from health food editor, Amy Hopkins, on Monday, November 5.

Inside The WH Kitchen features 49 recipes that are healthy, yet so delicious and filled with nutritional benefits.

“This cookbook is a collection of my favourite healthy recipes that I’ve created for Women’s Health over the past few years.

“It is not a diet book,” said Hopkins.

“My philosophy is that we need to feed ourselves well, with good-quality ingredients that fuel a healthy, active lifestyle.

“This isn’t about deprivation, starvation and kilojoule-restriction. It’s about making the most of beautiful, fresh, nutrient-rich ingredients.

“The recipes contain zero gluten, limited sugar, very little dairy and no pork.”

Hopkins has decided to give readers a taste of her cookbook by sharing one of the recipes.

Hostest with the Mostest Choc Tart



Ingredients

  • 2 tbsp coconut oil, plus 1 tsp for greasing
  • ¾ cup desiccated coconut

200g organic cacao paste (or raw chocolate or Lindt 90%)

  • ¼ cup sweetener of choice (agave, honey, maple syrup, coconut-blossom nectar)
  • 1 tin coconut cream
  • 160g to 200g fresh raspberries
  • ¼ cup almond flakes
  • ¼ cup coconut flakes


Method

  • Grease a 20cm tart dish or 12 ramekins.
  • Sprinkle desiccated coconut on the bottom of the dish and shake to make sure it’s evenly dispersed, covering the bottom and a little of the sides. Add a bit more if neces­sary.
  • Place the cacao paste, sweetener and the two tablespoons of coconut oil into a glass dish over a double boiler, heating gently to melt.
  • Add the coconut cream, stirring continuously to combine. Pour the mixture into the dish and place in the fridge to set overnight.
  • Decorate the tart with raspberries, almond flakes and coconut flakes and serve.
