The tree in the logo represents a willow and an olive tree; the curves represent the oil and the creek.<\/p>\n<p>The first 15 000 litres of oil produced in 2002 were bottled in ceramic decanters, the mould of which was made from a branch from the farm\u2019s first olive grove. <\/p>\n<p>Willow Creek produces around 500 000 litres of oil each year, with olives from 210 000 trees in eight varietals across 265 hectares.<\/p>\n<p>Willow Creek\u2019s olive oil is extracted by a decanter centrifuge which can process 6,5 tonnes per hour.
