Try this smoky, sticky and just a little sweet, this BBQ chicken pizza comes together perfectly in one bold, flavour-packed slice.\r<\/p>\n\n\n\n
Ingredients\r<\/p>\n\n\n\n
For the dough:\r<\/p>\n\n\n\n
675 g flour\r<\/p>\n\n\n\n
pinch of sea salt\r<\/p>\n\n\n\n
1 x 10 g packet instant yeast\r<\/p>\n\n\n\n
\u00bd t caster sugar\r<\/p>\n\n\n\n
2 t extra virgin olive oil\r<\/p>\n\n\n\n
1\u00bd cups warm water\r<\/p>\n\n\n\n
For the topping:\r<\/p>\n\n\n\n
2-4 t BBQ sauce per base (or to your preference)\r<\/p>\n\n\n\n
rotisserie chicken breasts, shredded\r<\/p>\n\n\n\n
350 g mozzarella, grated\r<\/p>\n\n\n\n
1 red onion, sliced (optional)\r<\/p>\n\n\n\n
Method\r<\/p>\n\n\n\n
1. To make the dough, sift the flour and salt into a clean bowl and make a well in the middle.\r<\/p>\n\n\n\n
2. In a jug, mix the yeast, sugar and olive oil into the water using a spoon. \r<\/p>\n\n\n\n
3. Allow to stand for a few minutes, then pour into the well. \r<\/p>\n\n\n\n
4. Gradually mix in the flour, swirling it into the liquid. Keep mixing, bringing in more flour, and when it all starts to stick together, mix in the remaining flour with your hands.\r<\/p>\n\n\n\n
5. Sprinkle a little flour onto a clean surface. Place the dough onto the surface and knead until smooth and springy, about 10 minutes. Shape it into a ball. Rub a little oil into a large bowl and place the dough into the bowl. Loosely cover the dough with cling film and place it in a warm place for 30 minutes, or until the dough has doubled in size.\r<\/p>\n\n\n\n
6. Sprinkle more flour onto the counter and briefly knead the dough again. Divide into 4 pieces.\r<\/p>\n\n\n\n
7. Roll out the dough into circles or rough rectangles about \u00bd cm thick and place onto greased and floured baking trays.\r<\/p>\n\n\n\n
8. Top each pizza with the BBQ sauce, shredded chicken, grated cheese and red onion (if using), then bake at 220\u00b0C until golden and crispy. Slice and serve.\r<\/p>\n\n\n\n
