\ndrink.  <\/span><\/p>\n\n\n\n

To demonstrate
\nits versatility, celeb foodies, Kamini Pather \u2013 MasterChef SA winner and
\nSabastian \u201cBas\u201d Newman \u2013 well-known pastry chef \u2013 will be experimenting with
\nthe tea over the next few weeks to add some sparkle to lockdown cooking.<\/span><\/p>\n\n\n\n

Pather says
\nshe\u2019s always been passionate about cooking with local ingredients and often
\nuses fynbos in her dishes. <\/span><\/p>\n\n\n\n

\u201cRooibos is
\nunmistakably South African and a versatile herb at that! It
\ngives dishes a warm, earthy tone, while its caramel flavour also complements
\nsweeter treats and desserts. <\/span><\/p>\n\n\n\n

\u201cSince it\u2019s a base note flavour, the tea enhances
\nan array of flavours from citrus to warm and spicy. In fact, I\u2019d challenge
\nanyone to volunteer a type of food that Rooibos doesn\u2019t pair well with,\u201d she
\nsays.<\/span><\/span><\/span><\/p>\n\n\n\n

To Newman, it\u2019s Rooibos\u2019 natural sweetness that
\ndrew him to it. \u201cWhen it comes to baking, it complements sweet and nutty
\nflavours really well. I love the combination of Rooibos and white chocolate \u2013
\none of my absolute favourite desserts is a Rooibos Creme Br\u00fbl\u00e9e. The tea\u2019s
\nnatural sweetness adds to and enhances the sweetness in dessert rather than
\noverpowering it.\u201d<\/span><\/p>\n\n\n\n

\nCouncil says while Rooibos is known for its health benefits due to its
\nabundance of antioxidants \u2013 when we think about cooking with it, many just
\ndon\u2019t know where to start.<\/span><\/p>\n\n\n\n

\n

\u201cThat\u2019s why we roped in Kamini and Bas to show
\nhome cooks how it\u2019s done. It\u2019s really easy and once you\u2019ve mastered it, you\u2019ll
\nbe able to reap the benefits of Rooibos when eating too.\u201d <\/span><\/p>\n\n\n\n

One of the best ways to infuse Rooibos into a
\ndessert is to make a simple Rooibos syrup. <\/span><\/p>\n\n\n\n

According to Newman, a basic syrup consists of a
\n1:1 ratio of sugar to water. \u201cWhen making a Rooibos syrup, add one cup of sugar
\nto one cup of water, squeeze in juice from half a lemon and add eight Rooibos
\ntea bags to a saucepan. Simmer on low heat until a syrup starts to form. Don\u2019t
\nboil, as you want the flavour of the Rooibos to have time to infuse into your
\nsyrup. Once cooled, remove the tea bags and store in a jar or glass bottle in
\nthe fridge and use as desired. <\/span><\/p>\n\n\n\n

\u201cThis simple Rooibos syrup can be used in creams
\nor brushed over freshly baked vanilla sponge cakes to keep them moist while
\nadding a touch of Rooibos flavour to it. It can also be incorporated into
\nbreakfasts by stirring it through plain vanilla yoghurt served with muesli and
\nfresh fruit or you could end off your day by adding the syrup to a refreshing
\nhomemade lemonade. For cocktail lovers, this syrup works equally well in gin.
\nThe possibilities and combinations are truly endless,\u201d he says. <\/span><\/p>\n\n\n\n
