Vegetable loaded corn falafel bites<\/p>\n\n\n\n
\n Ingredients<\/b>\n<\/p>\n\n\n\n
1.5 cup corn \u2013 char grilled<\/p>\n\n\n\n
1 large sweet potato \u2013 grated<\/p>\n\n\n\n
1 cup baby marrow \u2013 grated<\/p>\n\n\n\n
1 cup chickpea flour \u2013 sifted<\/p>\n\n\n\n
1spring onion \u2013 finely chopped<\/p>\n\n\n\n
\u00bd red onion<\/p>\n\n\n\n
\u00be cup water<\/p>\n\n\n\n
\u00bd cup brown rice flour<\/p>\n\n\n\n
\u00bc cup fresh coriander \u2014 finely chopped<\/p>\n\n\n\n
1 lime \u2013 juiced<\/p>\n\n\n\n
1 tablespoon pickled jalape\u00f1os \u2013 chopped plus 1 tablespoon jalape\u00f1o pickle brine<\/p>\n\n\n\n
2 teaspoons onion powder<\/p>\n\n\n\n
2 teaspoon ground cumin<\/p>\n\n\n\n
1 teaspoon smoked paprika<\/p>\n\n\n\n
\u00bd teaspoon baking soda<\/p>\n\n\n\n
\u00bd teaspoon apple cider vinegar<\/p>\n\n\n\n
generous pinch pink Himalayan salt and pepper<\/p>\n\n\n\n
\n Method:<\/b>\n<\/p>\n\n\n\n
Add corn, sweet potato, zucchini, spring onion, red onion, coriander, jalape\u00f1o pickles, jalape\u00f1o brine, lime juice, onion powder, ground cumin, smoked paprika, salt and black pepper to a mixing bowl. Mix well.<\/p>\n\n\n\n
In a separate bowl, add the chickpea flour, baking soda and apple cider vinegar on top of the baking soda so it activates it. Then slowly add the water so you form a nice paste without lumps, and keep adding the water until the mixture is well combined. You can use a whisk to remove any lumps.<\/p>\n\n\n\n
Add the chickpea mixture to the veggies and combine well. Add the brown rice flour to the mixture, make sure everything is well combined and let sit for 10-15 minutes.<\/p>\n\n\n\n
Wet your hands and shape the mixture into small balls or desired shapes.<\/p>\n\n\n\n
Heat a griddle pan, brush with olive oil to avoid sticking and place the bites onto the pan. Cook for a few min on each side so that they have beautiful char lines. Flip over and brush with olive oil if needed.<\/p>\n\n\n\n
Serve hot with lime wedges and your favourite dipping sauce.<\/p>\n\n\n\n
