For the grilled chicken breasts<\/p>\n\n\n\n
4 chicken breasts<\/p>\n\n\n\n
1 tablespoon Cajun spice<\/p>\n\n\n\n
1 teaspoon paprika<\/p>\n\n\n\n
\u00bc teaspoon garlic powder<\/p>\n\n\n\n
For the mushroom rice<\/p>\n\n\n\n
2 tablespoon cooking oil<\/p>\n\n\n\n
3 tablespoon butter<\/p>\n\n\n\n
1 tablespoon rice spice<\/p>\n\n\n\n
500 g mushrooms \u2013 sliced<\/p>\n\n\n\n
1 teaspoon fresh garlic \u2013 crushed<\/p>\n\n\n\n
1 cup long grain rice<\/p>\n\n\n\n
2\u00bc cup chicken stock<\/p>\n\n\n\n
spring onion \u2013 sliced to serve<\/p>\n\n\n\n
\n Method:<\/b>\n<\/p>\n\n\n\n
In a small bowl, place the chicken breast and pat dry. Coat chicken with 1 tablespoon of cooking oil, and sprinkle evenly with Cajun spice, paprika, garlic powder, salt and pepper. Then set aside.<\/p>\n\n\n\n
Heat 1 tablespoon of cooking oil and 2 tablespoon of butter in a large pot over medium heat. <\/p>\n\n\n\n
Add half the mushrooms, season with salt and pepper and cook until tender and browned, about 5-6 minutes. Then remove and set aside<\/p>\n\n\n\n
Add the remaining butter. When melted, then add remaining mushrooms. <\/p>\n\n\n\n
Cook for 5 minutes or until mushrooms are lightly browned. Stir in the garlic and spice for rice.<\/p>\n\n\n\n
Add rice and mix everything together. Add and stir in the dissolved vegetable stock.<\/p>\n\n\n\n
Place lid on, bring to a simmer. Cook for 20-25 minutes.<\/p>\n\n\n\n
Meanwhile, preheat grill pan to medium heat, coat the pan with little oil. Place chicken on the grill for 7-8 minutes. <\/p>\n\n\n\n
Flip over and cook an additional 7-8 minutes or until no pink remains. Rest 3-5 minutes before slicing.<\/p>\n\n\n\n
Remove from stove, remove lid, quickly stir in reserved mushrooms and green onions, put lid back on. Leave for 5 minutes.<\/p>\n\n\n\n
Fluff rice using a wooden spoon. Serve with the prepared chicken.<\/p>\n\n\n\n
