Hearty and comforting slow-cooked chicken stew with freshly steamed dumplings.<\/p>\n\n\n\n
\n Ingredients<\/b>
\n For the chicken stew<\/b>\n<\/p>\n\n\n\n
1 tbsp cooking oil<\/p>\n\n\n\n
8 chicken pieces<\/p>\n\n\n\n
1 onion \u2014 finely chopped<\/p>\n\n\n\n
\u00bd green pepper \u2014 finely chopped<\/p>\n\n\n\n
1 tsp paprika<\/p>\n\n\n\n
1 tsp mixed spices<\/p>\n\n\n\n
2 cups water<\/p>\n\n\n\n
1 chicken stock cube<\/p>\n\n\n\n
2 tsp tomato paste<\/p>\n\n\n\n
1 tsp fresh ginger \u2014 crushed<\/p>\n\n\n\n
1 cup carrots \u2014 chopped<\/p>\n\n\n\n
1 cup baby potatoes<\/p>\n\n\n\n
salt and black pepperFor the dumplings<\/b><\/p>\n\n\n\n
4 cup flour<\/p>\n\n\n\n
2 tsp baking powder<\/p>\n\n\n\n
1 pinch salt<\/p>\n\n\n\n
2 tbsp sugar<\/p>\n\n\n\n
1 tbsp margarine \u2014 or oil<\/p>\n\n\n\n
1\u00bd cups warm waterMethod:<\/b><\/p>\n\n\n\n
Heat oil in a medium-size pot and fry the chicken pieces until well browned on all sides then remove from the pot and set aside.<\/p>\n\n\n\n
Add the onion and green pepper and fry until soft. Add spices and fry for 1 minute, stirring constantly.<\/p>\n\n\n\n
Add water, stock cube and chicken and vegetables to the pot. Bring to the boil then reduce the heat and allow to simmer covered for 5-10 minutes. <\/p>\n\n\n\n
Add tomato paste and stir to combine. Add the carrots and potatoes. <\/p>\n\n\n\n
Season with salt and pepper.<\/p>\n\n\n\n
Slow-cook for 40 minutes or until the chicken is cooked and fall off the bone tender.Dumplings<\/b><\/p>\n\n\n\n
Mix all the dry ingredients, rub in margarine or add oil. Add the water and then mix well\/knead, (your dough shouldn\u2019t be stiff or watery) cover with a kitchen towel, allow to rise\/double the size.<\/p>\n\n\n\n
Divide dough into 6-8 dumplings, drop dumplings into your stew and cook for 20-25 minutes.<\/p>\n\n\n\n
