\n For the corn fritters<\/b>\n<\/p>\n\n\n\n
3 cups frozen corn<\/p>\n\n\n\n
2 eggs \u2014 lightly beaten<\/p>\n\n\n\n
1 cup self-raising flour<\/p>\n\n\n\n
1 small red onion \u2014 finely chopped<\/p>\n\n\n\n
30 g fresh coriander \u2014 finely chopped, plus extra to serve<\/p>\n\n\n\n
1 tsp salt<\/p>\n\n\n\n
freshly ground black pepper \u2013 to taste<\/p>\n\n\n\n
vegetable oil \u2013 for shallow frying<\/p>\n\n\n\n
sweet chilli sauce \u2013 for serving<\/p>\n\n\n\n
\n For the smashed avo salsa<\/b>\n<\/p>\n\n\n\n
2 avocados<\/p>\n\n\n\n
1 small red onion \u2013 coarsely chopped<\/p>\n\n\n\n
2 spring onions \u2013 sliced<\/p>\n\n\n\n
2 tbsp fresh lemon juice<\/p>\n\n\n\n
2 tbsp fresh coriander \u2013 finely choppedMethod:<\/b><\/p>\n\n\n\n
To make the fritters, combine half the corn with the eggs and flour in the jug of a stick blender and whizz until creamy and combined. <\/p>\n\n\n\n
In a bowl add the remaining corn, onion and the chopped coriander and mix well with the creamed egg mixture. Season to taste with salt and pepper.<\/p>\n\n\n\n
Heat the oil in a medium frying pan. Cook heaped tablespoons of the batter, one at a time, until browned both sides and cooked through, about 3-5 minutes per side. Drain on absorbent paper. <\/p>\n\n\n\n
Keep cooked fritters warm in a warmer or oven at a low temperature until serving time.<\/p>\n\n\n\n
To make the salsa, combine all the ingredients in a bowl and mash lightly with a fork to combine.<\/p>\n\n\n\n
Serve fritters topped the avocado salsa and drizzled with sweet chilli sauce. Garnish with fresh coriander.<\/p>\n\n\n\n
