\n Ingredients<\/b>\n<\/p>\n\n\n\n
6-8 chicken pieces<\/p>\n\n\n\n
salt and freshly ground black pepper<\/p>\n\n\n\n
10 ml cumin \u2013 ground<\/p>\n\n\n\n
2,5 ml each ground cinnamon and cayenne pepper<\/p>\n\n\n\n
5 ml dried oregano<\/p>\n\n\n\n
\n STEW<\/b>\n<\/p>\n\n\n\n
750 g baby potatoes<\/p>\n\n\n\n
1 red pepper, sliced<\/p>\n\n\n\n
1yellow pepper \u2013 cut into strips<\/p>\n\n\n\n
1 onion \u2013 sliced<\/p>\n\n\n\n
2 garlic \u2013 cloves, crushed<\/p>\n\n\n\n
1 tinned tomatoes \u2013 chopped<\/p>\n\n\n\n
lime \u2013 juice only<\/p>\n\n\n\n
orange \u2013 juice only<\/p>\n\n\n\n
250 ml stock \u2013 chicken<\/p>\n\n\n\n
\n to serve<\/b>\n<\/p>\n\n\n\n
fresh coriander<\/p>\n\n\n\n
rice or salad (optional)<\/p>\n\n\n\n
\n Method:<\/b>\n<\/p>\n\n\n\n
Preheat the oven to 180\u00b0C. Keep a large, deep oven-proof dish handy.<\/p>\n\n\n\n
1. Chicken: Season the chicken portions all over with salt and freshly ground pepper. Mix the other spices well and rub all over the chicken.<\/p>\n\n\n\n
2. Stew: Put all the ingredients except the chicken in the ovenproof dish. Mix well, then arrange the chicken in between the vegetables. Drizzle olive oil over and cover with foil. Cook in the oven for 45 minutes.<\/p>\n\n\n\n
3. Increase the oven temperature to 200\u00b0C. Remove the foil and roast uncovered for 15 minutes or until the chicken is golden brown.<\/p>\n\n\n\n
4. To serve: Sprinkle the coriander over and serve as is, or with rice or salad.<\/p>\n\n\n\n
