\n Ingredients<\/b>

\n for the chicken marinade<\/b>\n<\/b><\/p>\n\n\n\n\n
4 chicken thighs \u2014 boneless and skinless<\/p>\n
500 ml plain yoghurt<\/p>\n
150 ml milk<\/p>\n
1 tsp salt<\/p>\n
\n For the seasoned flour mix<\/b>\n<\/p>\n
240 g flour<\/p>\n
60 g cornflour<\/p>\n
1 tsp salt<\/p>\n
1 tsp black pepper<\/p>\n
1 tsp smoked paprika<\/p>\n
1 tsp chilli powder \u2014 or cajun spice<\/p>\n
1 tsp garlic powder<\/p>\n
oil \u2014 for deep frying<\/p>\n
\n For the spicy sauce<\/b>\n<\/p>\n
2 tbsp mayonnaise<\/p>\n
1-2 tsp chilli sauce<\/p>\n
1 tsp lemon juice<\/p>\n
\n To assemble<\/b>\n<\/p>\n
sweet and sour pickles<\/p>\n
lettuce<\/p>\n
4 burger buns \u2014 toasted<\/p>\n
\n Method:<\/b>\n<\/p>\n
In a big bowl mix chicken thighs with yoghurt, milk and salt.<\/p>\n
Cover with cling foil. let it marinate for one hour in the fridge.<\/p>\n
In a big bowl mix flour, corn starch, salt, black pepper, smoked paprika powder, garlic powder and chilli powder.<\/p>\n
Remove the chicken thighs, one by one, from the yoghurt mixture.<\/p>\n
Coat the thighs one at a time in the flour mixture (press firmly the flour mixture to coat well).<\/p>\n
Now, set aside the coated chicken thighs.<\/p>\n
Pour frying oil in a deep pot and let it start to heat.<\/p>\n
Check if the oil is ready to fry. (160\u00b0c\u2013175\u00b0c).<\/p>\n
Fry the chicken for 8-12 minutes, while gently flipping occasionally until it\u2019s golden.<\/p>\n
Fry the chicken in small batches to keep the temperature constant.<\/p>\n
Place the chicken cooked on a wire rack. (internal temp 74\u00b0c).<\/p>\n
Mix the sauce ingredients in a bowl and assemble the fried chicken to your liking.<\/p><\/b>\n\n\n\n
