Packed with fibre from the black rice, these mushroom fritters are the perfect go-to when you\u2019re looking for a quick snack or veggie-loaded lunch.<\/p>\n\n\n\n

\n Ingredients<\/b>\n<\/p>\n\n\n\n

250 g Denny Brown Mushrooms\u00ae \u2013 sliced<\/p>\n\n\n\n

2 spring onions \u2013 chopped<\/p>\n\n\n\n

1 tbsp fresh thyme<\/p>\n\n\n\n

3 cup wild rice \u2013 or brown rice<\/p>\n\n\n\n

40 g flour<\/p>\n\n\n\n

2 tsp baking powder<\/p>\n\n\n\n

3 XL eggs<\/p>\n\n\n\n

sea salt flakes<\/p>\n\n\n\n

Black pepper<\/p>\n\n\n\n

Olive oil \u2013 for frying<\/p>\n\n\n\n

250 ml double cream plain yoghurt<\/p>\n\n\n\n

2 tbsp fresh chives \u2013 finely chopped<\/p>\n\n\n\n

1 tbsp lemon juiceMethod:<\/b><\/p>\n\n\n\n

In a large saut\u00e9e pan fry the mushrooms, spring onions and thyme until tender. Season well with salt and pepper.<\/p>\n\n\n\n

Place the cooked rice into a large mixing bowl. Add the sauteed mushroom mix, flour, baking powder and a pinch of salt and pepper. Add whole eggs and mix well to form a thick batter.<\/p>\n\n\n\n

Spoon the batter into a frying pan on medium-high heat drizzled with olive oil. <\/p>\n\n\n\n

Fry them in batches until golden brown on both sides and cooked through.<\/p>\n\n\n\n

In a small bowl, mix together the yoghurt, chives and lemon juice. Season.<\/p>\n\n\n\n
