\n Ingredients<\/b>\n<\/p>\n\n\n\n
1 cup self-raising flour<\/p>\n\n\n\n
\u00be cup cheese \u2013 grated, plus extra as an optional topping<\/p>\n\n\n\n
\u00be cup milk<\/p>\n\n\n\n
\u00bc cup whole kernel corn in brine \u2013 drained<\/p>\n\n\n\n
\u00bc cup peas in brine \u2013 drained<\/p>\n\n\n\n
1 pinch salt<\/p>\n\n\n\n
1 tbsp fresh chives \u2013 chopped<\/p>\n\n\n\n
\n Method:<\/b>\n<\/p>\n\n\n\n
Pre-heat oven to 200 \u00b0C and lightly grease a mini muffin tray or line mini-muffin tray with liners.<\/p>\n\n\n\n
Combine all the ingredients together and stir until just combined.<\/p>\n\n\n\n
Spoon into the muffin tray and top with a some more cheese.<\/p>\n\n\n\n
Bake for 15 minutes, or until golden and cooked through, and a sharp knife or skewer inserted into the centre of one of the muffins comes out clean.<\/p>\n\n\n\n
Serve while still warm with some cold butter or pack them into a lunch box for a deliciously cheesy snack and enjoy.<\/p>\n\n\n\n
\n Tips<\/b>\n<\/p>\n\n\n\n
Make your own DIY self-raising flour by mixing 1 cup of flour with 2 teaspoons of baking powder and \u00bc teaspoon of salt. <\/p>\n\n\n\n
Mix well to combine. If you make your own self-raising flour, you can omit the pinch of salt in the ingredient list.<\/p>\n\n\n\n
You can add your own favourite seasonings to make the recipe your own like black pepper, smoked paprika, dried red chilli flakes or garlic powder.<\/p>\n\n\n\n
