1 x 400 g Chickpeas<\/p>\n\n\n\n
65 ml butter<\/p>\n\n\n\n
45 ml sunflower oil<\/p>\n\n\n\n
1 whole chicken<\/p>\n\n\n\n
salt and black pepper<\/p>\n\n\n\n
10 ml fresh thyme<\/p>\n\n\n\n
1 medium onion<\/p>\n\n\n\n
4 carrots \u2013 chopped<\/p>\n\n\n\n
2 garlic cloves \u2013 chopped<\/p>\n\n\n\n
200 g baby potatoes<\/p>\n\n\n\n
250 ml chicken stock<\/p>\n\n\n\n
\n Method:<\/b>\n<\/p>\n\n\n\n
Heat the butter and the oil together in a large heavy bottomed casserole dish.<\/p>\n\n\n\n
Season the whole chicken with the salt, pepper and thyme and place into the casserole dish.<\/p>\n\n\n\n
Brown the skin well on all sides.<\/p>\n\n\n\n
Remove the chicken from the casserole dish and set aside.<\/p>\n\n\n\n
Add the onions, carrots and garlic to the dish and fry for a few minutes, stirring occasionally until the onions begin to soften.<\/p>\n\n\n\n
Add the baby potatoes to the casserole dish and stir well to coat.<\/p>\n\n\n\n
Return the chicken to the casserole dish.<\/p>\n\n\n\n
Add the chicken stock to the dish and place the lid on the casserole dish.<\/p>\n\n\n\n
Place the casserole dish into the oven preheated to 170 \u00b0C and roast slowly for 45 minutes.<\/p>\n\n\n\n
Add the Chickpeas to the vegetables and stir well.<\/p>\n\n\n\n
Replace the lid and continue cooking until the chicken is cooked through and the vegetables are tender.<\/p>\n\n\n\n
If desired, to thicken the sauce, remove one cup of the vegetables together with some sauce and blend to smooth with a hand held blender.<\/p>\n\n\n\n
Return the puree to the remaining sauce in the dish and stir well to mix through.<\/p>\n\n\n\n
