Foto: Verskaf<\/p><\/div>\n<p><span data-contrast=\"auto\">Met die eerste oogopslag lyk die twee sjefs se kombuise dalk w\u00earelde van mekaar verwyder. Scrooby kook oor oop vlamme op \u2019n klein eilandjie in die dam op die <strong>Remhoogte-wynlandgoed<\/strong> buite Stellenbosch, waar hout nie net as brandstof dien nie, maar ook as geurmiddel. Aan die ander kant van die land, in Cowies Hill naby Durban, bou Richter weer sy spyskaarte rondom die oorsprong van sy bestanddele en die kultuur waaruit dit spruit. Vuur speel egter ook \u2019n konstante rol in sy kombuis.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:0,&quot;335559740&quot;:240}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"auto\">Wat die twee sjefs verbind, is hul gedeelde filosofie oor <strong>volhoubaarheid<\/strong>, grensverskuiwende gasvryheid en respek vir die bestanddele wat hulle gebruik.<\/span><\/p>\n<p><span data-contrast=\"auto\">Gedurende die twee dae en vier etes sal een enkele springbokkarkas in sy geheel afgeslag en voorberei word. Behalwe vir gewilde snitte soos die rugstring, filet en boud, sal die sjefs ook die snitte benut wat gewoonlik nie op die borde van spogrestaurant-spyskaarte beland nie.
