Recipe Collection, with a compilation of almost 200 family favourite recipes from our readers across the Eastern Cape province.<\/p>\n\n\n\n<p>This winter-warmer recipe was entered by Meredith Delport.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-\"><\/h2>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-butternut-and-orange-soup\">Butternut and orange soup<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-ingredients\">Ingredients<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 onions<\/li>\n\n\n\n<li>3 cups of chicken stock<\/li>\n\n\n\n<li>1 green and 1 red pepper<\/li>\n\n\n\n<li>4 cups of butternut and pumpkin, cut into chunks<\/li>\n\n\n\n<li>1 small apple, grated <\/li>\n\n\n\n<li>1 orange\u2019s grated peel and juice <\/li>\n\n\n\n<li>3 tbsp flour <\/li>\n\n\n\n<li>A pinch of nutmeg <\/li>\n\n\n\n<li>1 to 2 tsp curry powder<\/li>\n\n\n\n<li>1\u00bc cup of milk<\/li>\n\n\n\n<li>1 tsp of sugar<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-preparation\">Preparation<\/h3>\n\n\n\n<p><strong>Step 1:&nbsp;<\/strong>Brown finely chopped onion in butter and a dash of olive oil until translucent.<\/p>\n\n\n\n<p><strong>Step 2:<\/strong> Add the butternut and brown until all the butter has been absorbed.<\/p>\n\n\n\n<p><strong>Step 3:<\/strong> Add the flour, curry powder and nutmeg.<\/p>\n\n\n\n<p><strong>Step 4:<\/strong> Then add the apple, chicken stock, milk, orange peel and juice.<\/p>\n\n\n\n<p><strong>Step 5:<\/strong> Simmer for approximately 20 minutes.<\/p>\n\n\n\n<p><strong>Step 6:<\/strong> Blend and flavour to taste
