Ingredients<\/p>\n
1 tbsp olive oil<\/p>\n
1 tbsp butter<\/p>\n
1 onion \u2014 finely diced<\/p>\n
1 tsp fresh garlic \u2014 crushed<\/p>\n
1 tsp fresh ginger \u2014 finely grated<\/p>\n
1 tbsp curry powder<\/p>\n
\n 1<\/span>\/2<\/span> tsp ground turmeric<\/p>\n \n 1<\/span>\/2<\/span> tsp ground cumin<\/p>\n \n 1<\/span>\/2<\/span> tsp ground coriander<\/p>\n 2 tins brown lentils \u2014 drained and rinsed<\/p>\n \n 1<\/span>\/3<\/span> cup vegetable stock<\/p>\n \n 1<\/span>\/2<\/span> cup flaked almonds<\/p>\n \n 1<\/span>\/3<\/span> cup raisins<\/p>\n \n 1<\/span>\/4<\/span> cup chutney \u2014 or to taste<\/p>\n \u00bd lemon<\/p>\n salt \u2014 season to taste<\/p>\n Topping<\/p>\n 4 eggs<\/p>\n salt<\/p>\n 1 tbsp butter<\/p>\n 3 – 4 bay leaves<\/p>\n Method:<\/p>\n Add the olive oil and butter to a pan; once melted add the onions and fry until they are soft and just start to brown.<\/p>\n Add the garlic and ginger; stir to combine, and then add the curry powder, ground turmeric, ground cumin, and ground coriander. Allow the spices to cook for one minute, or until just fragrant.<\/p>\n Add the lentils followed by the vegetable stock, and allow to simmer gently for a few minutes.<\/p>\n Add the flaked almonds, raisins, chutney, and the squeeze of a fresh lemon.<\/p>\n Season with salt, and then place in an oven-safe dish.<\/p>\n Place the eggs in a bowl, season with salt, and lightly whisk.<\/p>\n Pour the eggs over the prepared lentil mixture. Break the butter into small knobs and disperse on top of the egg mixture.<\/p>\n Top with bay leaves and then bake in an oven preheated to 180\u00b0C for 20 minutes, or until the eggs are lightly
