Serves 6-8 as a snackIngredients:FOR THE BUTTERBEAN HUMMUS.<\/span> 2 x 400 g tins butterbeans, drained2 garlic cloves, crushed60 ml (\u00bc cup) lemon juice125 ml (\u00bd cup) olive oil10 ml (2 tsp) ground cuminSalt and pepper<\/p>\n\n\n\n FOR THE MANGO SWIRL\u00bd mango, peeled and diced30 ml (2 tbsp) lemon juice15 ml (1 tbsp) olive oilFOR THE TOPPING\u00bd mango, peeled and cut into small cubes\u00bd small red onion, thinly sliced|Small handful coriander, choppedZest and juice of 1 lime1 jalapeno, thinly sliced30 ml (2 tbsp) feta, crumbledPaprika or cayenne pepper for dustingCrackers and crudit\u00e9s to serveMethod:<\/p>\n\n\n\n 1. For the hummus, blend all the ingredients together using a stick blender until smooth. Season with salt and pepper. Spread out onto a platter.<\/p>\n\n\n\n 2.
