Who said eggs are just for breakfast? This little protein package can be eaten at any time of the day, and served in a variety of ways \u2013 from omelettes and quiches to salads and casseroles.<\/p>\n

Eggs are packed with 13 essential nutrients for every stage of life, from infancy to old age, and provide high-quality protein, closely matching human requirements for essential amino acids.<\/p>\n

<\/p>\n

\u2022\u20091\u2009tsp turmeric

<\/p>\n

\u2022\u20091 tsp mustard seeds

<\/p>\n

\u2022\u20092 tsp garam masala

<\/p>\n

\u2022\u20092 tbsp olive oil

<\/p>\n

\u2022\u20091 large onion, chopped

<\/p>\n

\u2022\u20092 cloves garlic, chopped

<\/p>\n

\u2022\u20091 tsp fresh ginger, grated

<\/p>\n

\u2022\u20091\u2009x\u2009400\u2009g can cherry tomatoes, or chopped tomatoes

\u2022\u20091 cup vegetable stock

<\/p>\n

\u2022\u20091\u2009x\u2009400\u2009ml can coconut milk

<\/p>\n

\u2022\u2009200\u2009g split red lentils, rinsed

<\/p>\n

\u2022\u2009sea\u2009salt and freshly ground black pepper, to taste

<\/p>\n

\u2022\u2009plain yoghurt, for serving

<\/p>\n

\u2022\u2009fresh coriander, for serving

<\/p>\n

\u2022\u2009ready-made rotis, toasted, for serving

<\/p>\n

\u2022\u2009150\u2009g cherry tomatoes, roasted, for serving<\/p>\n

\u00a6\u2009Method:<\/strong>

<\/p>\n

1.\u2009To make the dhal, dry fry the spices in a large pan until the mustard seeds pop and the spices are fragrant. Take care not to burn or they will become bitter. Remove from the pan and set aside.

<\/p>\n

2.\u2009Heat the olive oil in the same pan and fry the onion, garlic and ginger until translucent. Add the spices, canned tomatoes, stock, coconut milk and lentils, and reduce the heat to low. Simmer with a lid on until tender, stirring occasionally to prevent the lentils from sticking to the bottom of the pot, about 20 to 30 minutes. Season to taste.

3.\u2009When the lentils are soft and the dhal is cooked, poach the eggs according to your liking.

<\/p>\n

4.\u2009To serve, place an egg on the dhal, then top with the yoghurt and coriander.
