One large egg (60\u2009g) contains about 190\u2009IU (international units) of vitamin D, almost one third of our daily needs. <p><\/p>\n<div class=\"p\">Did you know that most of the vitamin D is in the egg yolk? <p><\/p>\n<div class=\"p\">Tossing the egg yolk may mean you miss out on zinc and selenium, two other nutrients important for supporting our immune system. <p><\/p>\n<div class=\"p\">Remember, too, that scientists think there may be a link between vitamin D deficiency and the risk of Covid-19 infections. <p><\/p>\n<div class=\"p\">In a new 2022 study, two Israeli researchers found that those with a vitamin D deficiency were 14 times more likely to have severe or critical disease than those with normal vitamin D levels. <p><\/p>\n<div class=\"p\">So why not serve up eggs whilst catching some rays at a picnic and get a double whammy of vitamin D? <p><\/p>\n<div class=\"p\">Whether simple and sunny side up, or sandwiched in a bagel with scrumptious smoked trout, include eggs as part of your healthy and balanced diet this winter.<p><\/p>\n<div class=\"p\">Here is a recipe for the perfect breakfast or picnic food.<p><\/p>\n<div class=\"p\">\n<div class=\"p\"><strong>Egg and smoked trout bagel<\/strong> <p><\/p>\n<div class=\"p\"><strong><\/strong><p><\/p>\n<div class=\"p\">Serves 4 <p><\/p>\n<div class=\"p\">\n<div class=\"p\"><strong>Ingredients <\/strong> <p><\/p>\n<div class=\"p\">\u00a6\u2009500\u2009ml boiling water <p><\/p>\n<div class=\"p\">\u00a6\u200930\u2009ml vinegar <p><\/p>\n<div class=\"p\">\u00a6\u20094 eggs<p><\/p>\n<div class=\"p\">\u00a6\u20094 bagels, toasted<p><\/p>\n<div class=\"p\">\u00a6\u2009100\u2009g smoked trout, thinly sliced <p><\/p>\n<div class=\"p\">\u00a6\u2009200\u2009g baby spinach, blanched <p><\/p>\n<div class=\"p\">\u00a6\u20092 dill fronds, chopped<p><\/p>\n<div class=\"p\">\u00a6\u20091 lemon<p><\/p>\n<div class=\"p\">\u00a6\u2009salt and pepper to taste<p><\/p>\n<div class=\"p\">\n<div class=\"p\"><strong>Method <\/strong> <p><\/p>\n<div class=\"p\">1.\u2009In a small saucepan pour the 500\u2009ml boiling water and vinegar into a small saucepan and bring to a simmer. Once the water starts boiling, reduce the heat to low. Crack open the eggs one at a time into separate ramekins or egg poaching cups. <p><\/p>\n<div class=\"p\">2.\u2009Drop the poaching cups into the water. For a firm white and runny yolk, you\u2019ll want to poach for 3 to 4 minutes. Remove with a slotted spoon once done to your liking and set aside. <p><\/p>\n<div class=\"p\">3.\u2009Slice bagels in half, and toast. <p><\/p>\n<div class=\"p\">4.\u2009Layer blanched spinach onto the bagel halves, followed by the smoked trout and poached eggs and top with chopped dill. <p><\/p>\n<div class=\"p\">5.\u2009Squeeze fresh lemon juice over the assembled bagel. Season with salt and pepper and
