Tacos are a quick and fuss-free meal as most of the preparation can be done before guests arrive. <\/p>\n\n\n\n

Fillings can be laid out for family and guests to help themselves and build their own tacos. <\/p>\n\n\n\n

Mango can be included with leftover roast meats, chicken breasts, battered fish or even fish fingers.<\/p>\n\n\n\n

This mango and calamari taco-recipe is enough for four.<\/p>\n\n\n\n

Preparation time: 20 minutes<\/p>\n\n\n\n

Cooking time: 10 minutes <\/p>\n\n\n\n

Ingredients:<\/p>\n\n\n\n

.<\/span> 250 g crumbed calamari or other filling (leftover roast meats\/chicken breasts\/battered fish)<\/p>\n\n\n\n

.<\/span> 4 wholewheat tacos or wraps <\/p>\n\n\n\n

.<\/span> 2 large ripe mangoes, peeled, stoned and diced<\/p>\n\n\n\n

.<\/span> 1 small red onion, finely chopped<\/p>\n\n\n\n

.<\/span> 1 green chilli, deseeded and chopped (optional) <\/p>\n\n\n\n

. <\/span>\u00bd bunch coriander, washed and chopped <\/p>\n\n\n\n

.<\/span> \u00bd iceberg lettuce, washed and shredded<\/p>\n\n\n\n

.<\/span> 6 spring onions, thinly sliced<\/p>\n\n\n\n

.<\/span> Mayonnaise, to drizzle <\/p>\n\n\n\n

.<\/span> Lemon or lime wedges, to serve <\/p>\n\n\n\n

Method:<\/p>\n\n\n\n

Cook the calamari according to instructions on the packet. While the calamari is cooking, heat a non-stick frying pan over medium heat and toast the wraps until lightly golden.<\/p>\n\n\n\n

Mix the diced mango, red onion, chilli and coriander together.<\/p>\n\n\n\n

To serve, layer the iceberg lettuce into each taco, top with calamari and a big spoonful of mango salad. <\/p>\n\n\n\n

Finally add spring onion and a drizzle of mayonnaise and serve with wedges of lemon or lime. <\/p>\n\n\n\n
